An Amazing Raw Lunch Recipe

Pasta?  Nope. Zucchini, carrots, basil pesto (from scratch), tomatoes, and olives.  This is probably one of the tastiest raw meals I've had to date.  I really cannot tell the difference from normal pasta, as the zucchini is so soft and tender.  Obviously the carrots are crunchy, but that does not distract from the pasta-like taste, thanks to the pesto sauce.  After eating this you will want more.   Thanks again Erica!

How do you make this?  Very simple.  Time? 7 min or less depending on the prep time.  It's best if your veggies are room temperature, which allows for a softer texture.

  • One carrot (slice with a potato slicer in strips)
  • One zucchini (slice with a potato slicer in strips)
  • Handful of olives
  • Handful of tomatoes
  • Raw pine nuts (optional)
  • Two table spoons of fresh pesto with or without cheese.  I'll leave that up to you.  
Enjoy this super healthy, super yummy raw meal.  (all ingredients should be raw, local - in season, and organic for maximum nutritional content)

An Amazing Raw Breakfast Recipe

I was inspired by a book recently purchased called (Raw Food, by Erica Palmcrantz), and I wanted to share it with you.  My raspberries went bad, so i substituted dates and apples. The book is amazing, as it has so many unique variations on foods I would never combine. Thanks again Erica!

  • 1/2 cups of raspberries
  • 1/3 cup of blueberries
  • 1 banana sliced
  • a little apple, any kind, cut any way you like.
  • 1 date chopped
  • raw sunflower seeds to taste
  • raw caoco nibs, just a pinch.
  • handful of raw hazelnurs, crushed
  • blue agave nectar, and/or raw honey
  • dash of cinnamon.
  • fresh mint (optional)
Enjoy this super healthy, super yummy raw meal.  (all ingredients should be raw, local -in season, and organic for maximum nutritional content)
